The bean (Phaseolus vulgaris) is a biological species, a plant of the Legume family (Fabaceae). It was brought to Europe at the time of the Great Geographical Discoveries. It is grown as a domestic food crop all over the world. Beans have an extremely high nutritional value (approximate values): proteins — 23.3%; carbohydrates — 55.5%; water — 11.2% and fat — 1.5%; contains vitamins of group B and vitamin C. A large number of tubers develop on the roots, where bacteria live, supporting the growth and development of the bean.
