Wheat is the main cereal crop cultivated in Bulgaria. Wheat whole grains are a rich source of B, E and K vitamins, a diversity of minerals (iron, magnesium, phosphorus, zinc, calcium, potassium), essential amino acids, ω-6 fatty acids, fibers. A wheat-based meal is highly nutritious. The most widely grown variety is the soft wheat, which contains high amount of gluten and is used mainly for making bread. The hard wheat is used for making pasta, couscous, crushed grain etc.
